One Sixty Degrees

Ingredients
- · 400g Strong White Bread Flour
- · 1 Tsp Fine Sea Salt

3 Tbsp Whitworths Caster Sugar
- · 10g Dried Fast Action Yeast
- · 65g Unsalted Butter, cold
- · 1 Large Egg, lightly beaten
- · 75ml Whole Milk
- · 125ml Water
- · Vegetable Oil, for Frying

200g Whitworths Icing Sugar
- · 2-3 Tbsp Water
Directions
- · Add the flour, salt and sugar to a large bowl and mix.
- · Stir in the yeast.
- · Cut up the butter into small chunks and lightly rub it into the flour mix. You DON’T want to end up with a breadcrumb consistency and lumps of butter should remain.
- · Measure the milk and water into a microwaveable jug and heat in the microwave in 10 sec bursts until lukewarm.
- · Make a well in the dry ingredients and pour in the milk, water and lightly beaten egg.
- · Begin combining the ingredients using a silicone spatula or wooden spoon until the dough starts to come together. Then use your hands to mix until no flour remains around the edge of the bowl.
- · Cover the bowl with cling film and allow the dough to rest for 1 hour.
- · Place the dough onto a lightly floured work surface and knead the dough a little to make it less sticky.
- · Roll out the dough into a long rectangle, then fold both short ends so they meet in the middle.
- · Next fold the dough like a book and roll out into a rectangle again. Repeat the folding process 3-4 times.
- · Pop the dough back into the mixing bowl, cover with cling film and let it rest for 30 mins.
- · Roll the dough into a large rectangle, approx. 1cm thick.
- · Using a pizza cutter or sharp knife, cut the dough into 12 strips approx. 3cm wide.
- · Make a cut down the length of each strip, leaving a 2cm gap at each end.
- · Twist each strip and place them on a lightly oiled baking tray. The twists of dough will double in size so leave plenty of space between each.
- · Cover the baking tray with cling film and place in a warm area until the twists of dough have doubled in size.
- · Heat your oil in a large, heavy bottomed pan until it reaches 170°C. You want the oil to be approx. 1cm deep.
- · While the oil is heating, mix the icing sugar with the water until smooth.
- · Fry the yum yums 2 at a time for 2 mins on each side, or until golden. Check the oil temperature as you fry each set of yum yums as it will fluctuate. If the temperature is too cool, the yum yums will end up greasy and if the temperature is too hot, the outside will cook too quickly.
- · Place the cooked yum yums on a wire rack and immediately brush each side with the icing while they are hot.
- · Allow to cool and enjoy!
