Preheat your oven to 180C/Gas 6
In a large bowl, mix the flour, sugar and salt together
Add the sunflower oil to the bowl and rub into the flour using your fingertips, until the mixture is like breadcrumbs
Add 3 tablespoons of cold water and mix with a spoon until it forms a bowl
Dust your worktop with flour. Then foll your dough it forms a circle about 20 cms
Use the pastry to line a 18 cm loose-bottomed sandwich cake tin. Trim the excess, and use it to fill in any gaps
Line the case with baker paper and half fill with baking beans
Bake for 15 minutes, then remove the paper and beans and bake for a further 5 minutes or until the sides are crisps and browned
