Buttery and soft red velvet cupcakes

Ingredients

150 g of Plain Flour

1 tbsp of Cocoa Powder

1 tsp of Baking Soda

50 g of Softened Butter

150 g of Whitworths Caster Sugar

1 Large Beaten Eggs

1 tsp of Vanilla Paste

100 ml of Buttermilk
-
50 ml of Vegetable Oil
-
1 tsp of White Wine Vinegar

1 tbsp of Red Gel Food Colouring

100 g of Softened Salted Butter
-
225 g of Whitworths Icing Sugar
-
100 g Full Fat Cream Cheese, Stirred

Cream Cheese Icing
Directions
Line a cupcake tin with 12 cupcakes cases
Preheat your oven to 160c/Gas 4
Sieve the flour, coca, baking soda and a pinch of salt into a bowl and mix
Beat together the butter and the sugar until light and fluffy
Then add the egg, vanilla, buttermilk, oil and vinegar until combined. Gradually mix the wet ingredients into the dried
Once combined, add the red food colouring until you have a deep red mixture
Pour the batter into the cupcake cases and bake for 15 minutes
While the cupcakes are cooling, make the icing. Beat together the butter and icing sugar until fluffy. Then beat in the cream cheese until well combined
Once the cakes are cool, using a piping bag (use a star nozzle) cover the cupcakes with the cream cheese icing
