Peel your potatoes, diced them into small cubes, then boil until soft. Then drain the water and mash your potatoes to create a puree.
Pre-heat your oven to 180C and line your baking tray 6x6in
In a large mixing bowl. add the following ingredients: sweet potato puree, sugar syrup, almond butter, vanilla extract, baking powder and cocoa powder, salt and olive oil.
Stir really well to combine then add the flour. Once the batter is nice and thick, add the chocolate chips.
Pour your batter in your lined baking tray, then pop in the oven to bake for 30 minutes.
Your brownie should be gooey and soft. Let it cool down and cut into squares before serving. Enjoy!
