Start by pre-heating your oven to 1800ºC and line your loaf tine with baking paper
In a large bowl, add sugar, eggs and oil and whisk until your batter is mixed well and runny
Then add your flour (sifted in needed), bicarb of soda, and baking powder
Once your batter is mixed combined, add the lime zest and grated courgette until evenly combined
Pour the batter into your lined loaf tin, then bake for 50 minutes
Stick a tooth pick in the middle to check your cake is well cooked
Once cooked, cool down your cake completely and start your frosting
