Whether it's for a party or a cosy night in, these s'mores bars are the perfect treat!! Easy to make and fun to eat, they're the perfect snack for all ages.
In a large bowl, mix together the
crushed Digestive biscuits (reserve 25g for topping), sugar, melted butter, and salt until well combined.
Press the mixture firmly into the
bottom of a 9x13-inch baking pan and bake the base for 10 minutes.
Remove the pan from the oven and
evenly sprinkle 250g of the mini marshmallows over the baked base. Optional: Sprinkle the Demerara
sugar over the marshmallows to caramalise the top.
Return the pan to the oven and
bake for another 10 minutes, until the marshmallows are golden and slightly
puffed.
Let the pan cool for about 5
minutes to allow the marshmallows to settle.
Evenly distribute the chocolate
over the cooled marshmallow layer.
Sprinkle the remaining mini
marshmallows, reserved 25g of crushed biscuits and demerara over the chocolate
layer.
Bake for an additional 10
minutes, or until the marshmallows on top are lightly toasted.
Let the bars cool completely in
the pan before slicing into squares.
