Celebrate Comic Relief with delicious red velvet truffles

Ingredients
1/2 cup unsalted butter

1 1/2cups Whitworths Caster sugar
2 Large Egg
1/4 cup of Cooking Oil
1 Tbsp of Cocoa Powder
2 1/2 Tbsp of Red food colouring
2 Tsp of Vanilla extract
1 Tbsp of White vinegar
2 1/2 cups (350g) of Plain flour
1 tbsp Baking soda
1 tsp of Salt
1 cup of Milk
1 tsp of Vanilla Extract
1 cup of Cream Cheese

2 Tsp of Whitworths Icing Sugar
Squeeze of Lemon Juice
For the Frosting
Directions
Preheat the oven to 180C and lightly grease to cake tins
Cream together butter & sugar until pale and creamy & beat in the eggs, 1 at a time, ensuring well combined
In a smaller bowl, mix together the oil, cocoa powder , red food colour & vinegar, until red in colour
Stir the oil mix into the butter mixture until well combined
Slowly fold the flour mix into the oil mix & slowly add the milk
Repeat until the mixture is well combined & split the mixture into two & pour into the greased cake tins
Cook for 29 minutes
To make the truffles
Fold together the ingredients of the frosting
Form a ball shape using the frosting
Gently crumble the cake to form a crumble & coat the ball in the red velvet cake
