Ingredients

100g Apricot Jam
¼tsp Orange Extract
175g Unsalted Butter
125g Whitworths Light Soft Brown Sugar
125g Whitworths Caster Sugar
1 Large Egg, plus 1 yolk
2.5tsp Vanilla Extract
¼ tsp Sea Salt
225g Plain Flour, sifted
150g Dark Chocolate Chips
16 Jaffa Cakes

Directions

Preheat the oven to 170°C fan and line an 8 inch square tin with greaseproof baking paper.
In a small bowl, stir the jam to loosen it and put it through a sieve to remove any lumps. Mix in the orange extract. Set aside.
In a large mixing bowl, cream together the butter and sugars.
Next add the eggs and vanilla and whisk until light and fluffy.
Sift in the flour and salt and mix until smooth.
Add the dark chocolate chips and fold until evenly distributed.
Spread the mixture evenly across the bottom of your prepared tin.
Drop small blobs of jam over the top of the blondie mixture using a small spoon.
With a knife or skewer, swirl the jam into the mixture.
Pop the tin into the preheated oven and bake for 25 mins.
Remove from the oven and immediately place the Jaffa Cakes on top, pressing them in slightly.
Leave the blondies to cool in the tin for at least 4 hours, ideally overnight.
Slice and enjoy!
