Preheat the oven to 200°C/190°C fan, grease and line 2 sheets of baking paper.
In a mixing bowl, combine the yeast, sugar, and half the warm water. Let sit for 5 minutes until frothy.
Mix the reaming water, flour, and salt. Then knead for 5 minutes until smooth and elastic.
Transfer dough onto a clean floured surface and divide into 10 equal pieces, approx. 100g each.
Roll each piece on the counter or between your hands into a 24-inch rope. For crispier pretzels, make thinner ropes; for softer ones, make them thicker.
Shape each rope into a "U", cross the ends over each other once, then twist and press them down to the bottom of the "U" to form a pretzel.
Place onto your baking paper and let rise for 30 mins for best results.
Mix together the baking soda and litre of water. Place each pretzel in the bath for approx. 30 secs, then place back onto the baking paper.
Score each pretzel and sprinkle with salt.
Bake for 15 mins and let cool for 5 mins before serving.
