cut off the stems from the peppers and slice them into rounds.
In a large pot over high heat, combine all other ingredients
and bring to a boil. Reduce the heat and let it simmer gently for about 5
minutes.
Add the jalapeños to the pot and simmer on a high heat for 4 minutes.
Use a slotted spoon to transfer the peppers into a sterilised jar leaving space for the liquid to come.
Increase the heat under the pot to high and boil the liquid for about 6-7 minutes. Remove the pot from the heat and let the liquid cool for before pouring into the Jalapeño jar. be sure to stir thoroughly once combined.
Place the Jalapeños into the fridge, for best results leave for around a month, otherwise 2 weeks is fine.
