Preheat oven to 180°C and line a loaf pan with parchment paper.
In a large bowl, mash the ripe bananas with a fork or potato masher until smooth.
Add the eggs, vanilla extract, brown sugar, and granulated sugar to the mashed bananas. Whisk the mixture until everything is well combined.
Melt the Biscoff spread in the microwave in short intervals (20 seconds), then add it to the bowl and whisk until incorporated.
Gradually add the flour and baking soda to the wet ingredients, mixing until just combined.
Pour the mix into the prepared loaf pan. Sprinkle chunks of Biscoff cookies on top.
Bake for 50-60 minutes, or until a skewer comes out clean. Allow the banana bread to cool before serving.
