The Story Behind the Bake
Papanasi (pronounced Papanash) or Romanian Fried Cheese Doughnuts are the most popular Romanian dessert which is more than a sweet treat. Papanasi is not just food; it’s a statement of flavour, a celebration of family and tradition. It is about memories, nostalgia and moments of togetherness. This cheese doughnut is soft inside and crunchy on the outside, every bite is a delight, topped with crème fraiche and sour cherry jam.
Traditionally, these treats are made to order, ensuring they are irresistibly fresh, ensuring their much loved texture - definitely worth the wait!
Romanian Fried Cheese Doughnuts (Papanasi) are renowned for their soft, cheesy interior and crispy exterior. Each bite offers a delightful contrast of textures, making them a cherished family favourite in Romania.
Add the eggs, sugar, bicarbonate of soda, salt to the well dried cheese and mix until well combined with a fork. Then, incoprate the flour gradually.
Flour the working surface and knead the dough into a ball. Give it a round shape and divide it in 8 parts keeping one part to form the balls which will go on top. The dough must be slightly sticky. Use extra flour to give the doughnut a whole in the middle to form a ring.
Heat a generous amount of oil in a pan. Make sure to use a medium heat. Fry no more than 3-4 doughnuts at a time so there is enough space between them. Fry them on both sides until they are golden brown.
Transfer the doughnuts on a paper towel to remove the excess oil.
Serve hot with lots of crème fraiche and jam. Enjoy!
