If like us, Yorkshire pudding is the favourite part of a Sunday roast, then absolutely give these sweet fruity mini Yorkshire puddings a try! They are so light, fluffy and deliciously sweet.
Ingredients

50g Whitworths Caster Sugar

50g Whitworths Light Soft Brown
Sugar
- 150g Chopped Strawberries
- 2 Large Eggs
- 150ml Semi-Skimmed Milk
- 1 Tbsp Whitworths Caster Sugar
- 100g Plain Flour, sifted
- Vegetable Oil
- 200ml Whipping Cream
- Fresh Fruit

Directions
Strawberry Syrup
- Add the sugars and strawberries to a saucepan and heat on the hob on a medium setting.
- Stir constantly for 10 mins.
- Strain the syrup through a sieve and set aside to cool.
Yorkshire Puddings
- Preheat the oven to 220°C/200°C fan.
- Whisk together the eggs, milk and caster sugar in a bowl.
- Gradually add the flour and continue whisking until you have a smooth batter. Set aside.
- Add 1 tsp vegetable oil to the holes of a 12 hole muffin tin.
- Place the muffin tin in the oven for 15 mins.
- Once the oil is hot, immediately pour the batter into each hole, evenly distributing it between each. Cook for 15-20 mins until puffed up and browned.
- Let the Yorkshire puddings rest for a few mins, then transfer to a plate to cool.
- Whip the cream until it just holds it’s shape.
- Pipe/spoon the cream into the centre of each Yorkshire pudding.
- Top with fresh fruit and drizzle the strawberry syrup over the top.
- Dust with icing sugar and enjoy! (best served on the day).
