Pistachio and white chocolate Cookies with a gooey and irresistible pistachio cream centre , baked into soft, buttery cookies.
Directions
- On a sheet of baking paper, place
8 tablespoons of Pistachio cream and freeze for at least 2 hours or overnight.
- Add the butter and two sugars to
a bowl and beat until light and creamy.
- Add in the egg and vanilla and
mix well.
- Fold in the plain flour, baking
powder and salt and beat into a dough.
- Add in the chocolate chips and
crushed pistachios, mix until evenly distributed.
- Divide the dough into 8 equal
parts by weighing carefully.
- Preheat your oven to 180ºc fan.
- Add a spoonful of the frozen
pistachio cream and form the dough around this.
- Once rolled into balls, garnish
with chopped pistachios and freeze for 30 minutes.
- Next, bake the cookies in the
oven for 12-14 minutes . Once baked, leave them to cool before eating!
