On a sheet of baking paper, place 8 tablespoons of Pistachio cream and freeze for at least 2 hours or overnight.
Add the butter and two sugars to a bowl and beat until light and creamy.
Add in the egg and vanilla and mix well.
Add in the plain flour, baking powder and salt and beat into a dough.
Add in the chocolate chips and crushed pistachios, mix until evenly distributed.
Divide the dough into 8 equal parts by weighing carefully.
Preheat your oven to 180ºc fan.
Add a spoonful of the frozen pistachio cream and form the dough around this.
Once rolled into balls, garnish with chopped pistachios and bake the cookies in the oven for 12-14 minutes - Once baked, leave them to cool on the tray for at least 30 minutes before eating!
Take your cookies out of the freezer and place on a lined baking tray.
