Directions
Using a pestle and mortar or the end of a rolling pin, grind together the mint, releasing oil to form a paste of the two.
In a jug pour 150ml of boiling water of the paste.
Cover and leave to infuse until the water is cooled, for better results leave as long as possible.
Sieve the mixture into a saucepan and stir over a medium heat until the sugar is fully dissolved. Once dissolved, boil for around 2 minutes.
Transfer the cordial into a sterilised jar/container and let cool. Enjoy!
