Love Letter Cookies by Cottage Delight and Whitworths Sugar
Edible love letters are so much tastier than real letters. Cottage Delight and ourselves have teamed up to bring you a sweet and cute V-day recipe, so easy to make and definitely wow factor
Add flour, 2 tbsp Whitworths icing sugar, salt and butter to a food processor and process until crumbly (or use your fingers).
Mix the oil with 3 tbsp of cold water and gradually add to the crumbs until a dough forms. You may not need all the oil and water, so add gradually until it comes together. Roll into a rough ball shape and wrap in cling film for at least 30 mins.
Roll out chilled pastry into a big rectangle and
cut out 3inch x 3inch squares. Dab the edges of the squares with a little
water. In a diamond shape, fold up bottom corner, then fold the sides in to
create the envelope shape.
Spoon in 1 tsp
of jam to each envelope. Use leftover pastry to add little hearts on top.
Bake in the oven for 15-20 mins at 200c, until
starting to turn golden. Sprinkle with 2 tbsp Whitworths icing sugar before
serving.
