- 175g butter/baking spread

175g Whitworths caster sugar
3 eggs
175g self raising flour
1tsp vanilla extract
30ml lemon juice
30ml lemon juice

90g Whitworths icing sugar
30ml lemon juice

Directions
- In a large bowl, mix together butter/baking spread and caster sugar
Mix in the eggs and vanilla extract
Sift in the self raising flour and gently mix in
Grease and line a 1lb loaf tin and pour the mix in
Preheat your oven to 160C (fan) then bake for 60 mins or until a toothpick comes out clean (cover the top with foil after 30 mins if it’s browning too quickly)
Mix together the drizzle ingredients and pour over the warm cake, then leave to cool
Remove the cooled cake from the tin
Mix together the icing ingredients and pour over the top of the cake
