Ingredients

180g Whitworths Dark Muscovado sugar
1 tsp Vanilla Extract
60g Butter, melted
230ml Guinness
1 Egg, large
240g of Dried Fruits (cherries, golden raisins)
250g Plain Flour
2 tsp Baking Powder
½ tsp Salt
½ tbsp Cinnamon
Spice mix: Nutmeg (¾ tsp), Cinnamon (1 tsp), All spice (¾ tsp) ginger (1 tsp) and a pinch of ground Cloves.
140g of Glacier Cherries (optional topping for bun)

Directions

Preheat the oven to 180°C degrees. Grease a loaf pan with baking paper and set aside.
In a bowl, whisk together the dark muscovado sugar, vanilla, melted butter, Guinness, and egg.
In a separate bowl, combine flour, baking powder, nutmeg, cinnamon, spices, and salt.
Next, add in the dried fruits and mix until well distributed.
Combine the wet and dry ingredients and mix well. Avoiding any pockets of flour.
Pour the mixture into the prepared loaf tin and add glacier cherries (optional).
Bake for about 60-75 minutes at 180°C.
Slice and enjoy your Jamaican Spiced Bun!
