Ingredients

220g Whitworths Light Soft Brown
Sugar

80g Whitworths Caster Sugar
- 200g Unsalted Butter, at room temperature
- 1 Large Egg and 2 Egg yolks at room temperature
- 1 Tsp Vanilla Extract
- 400g Plain Flour
- 1 Tsp Bicarbonate of Soda
- ½ Tsp Fine Sea Salt
- 150g Milk Chocolate Chips
- 200g White Chocolate Chips

650g Nutella
200g Kinder Chocolate Bars (16 Bars)
Directions
- Lightly grease a deep 8 inch/20cm round springform tin and line the bottom with greaseproof baking paper.
- In a large bowl, cream together the butter with the sugars for 2-3 mins using a stand mixer or electric whisk.
- Add the egg, egg yolks and vanilla extract and beat again until combined.
- In a separate bowl mix together the flour, bicarbonate of soda and sea salt.
- Once the dry ingredients are mixed, add these into the butter and sugar mixture and mix until combined.
- Add the milk chocolate chips and 100g of the white chocolate chips and mix until evenly distributed.
- Divide the cookie dough into 3 (approx. 415g each).
- Press the first third of cookie dough into the base of your prepared tin, until it is flat and completely covers the base.
- Take the next third of cookie dough and use this to make the sides of your pie by pressing it around the edges, sealing any gaps. You want the height of the sides to be approx. 3.5cm from the top of the base.
- Next, add the Nutella to a microwaveable bowl and pop it in the microwave on a high heat for 20-30 seconds.
- Add the remaining white chocolate chips to the Nutella and fold them in.
- Put half of the Nutella onto the base of the pie and spread it out.
- Next, place the Kinder chocolate bars on top of the Nutella in rows. You will need to break some of the bars up to fit them in.
- Gently press the chocolate bars into the Nutella and then cover with the rest of the Nutella. The top layer of Nutella should be level with the sides of the pie, not overflowing.
- Pop the tin in the freezer for 1 hour to set and cover the last third of cookie dough with some cling film until ready to use.
- Once the Nutella has firmed up, use the remaining cookie dough to cover the top of the pie, pressing it right up to the edge of the tin.
- Put the tin in the freezer for 1 more hour.
- When almost ready to bake, preheat the oven to 190°C/170°C fan.
- Bake the cookie pie in the oven for 30-40 mins until golden.
- Leave the cookie pie to fully cool in the tin. The pie may crack slightly around the edges as it cools.
- Once cool, leave the pie in the tin and put it in the fridge to chill overnight.
- Cut up the cookie pie into wedges using a sharp knife and enjoy!
