Ingredients

Butter, softened - 225g

Whitworths Caster Sugar - 225g

Vanilla Extract - 1 tsp

Large Eggs - 3
-
Milk - 3-4 tbsp

Self-raising Flour - 300g
-
Dessicated Coconut - 100g
-
Glace Cherries, halved - 200g
Directions
Pre-heat the oven to 180°C / Gas Mark 4.
Beat the butter and Whitworths Caster Sugar in a large bowl for 2-3 minutes, until light and fluffy.
Add the eggs and milk and continue to beat for 2-3 minutes.
Add 150g of the cherries and the remaining ingredients and beat briefly to combine.
Pour the mixture into the prepared tin (12" x 9"), sprinkle over the remaining cherries and bake for 25 minutes, until lightly golden and cooked through.
Allow to cool slightly before transferring to a cooling rack to cool completely, serve.

I only have a 10 × 8 inch tin so how much do I reduce the ingredients by?

I love your recipe, it is delicious however I find that I need to bake it for approximately 40 minutes 🤔
