Cream the softened butter and dark
soft brown sugar until fully combined, then slowly add the 2 eggs, beat until
smooth.
Fold in the flour, a little at a time.
Add the baking and cocoa powder followed by the mashed bananas and chocolate
chips.
Line a 2lb loaf tin with parchment
paper and pour the mixture into the prepared tin. Add some sliced banana and a
sprinkle of demerara sugar for decoration.
Air fry for around 45 mins on 150° C,
or until cooked through. Check the loaf at 5 minute intervals from around 30
mins by testing it with a skewer. If the skewer is inserted and removed cleanly
it’s ready! (times may vary depending on the shape of your loaf tin/air fryer
model).
Cool in the tin for 10 mins, then
remove to a wire rack. Leave to cool for around 30 mins before eating (if you
can wait that long!)
