Ingredients
100g of Plain Flour
1 1/2 Tsp of Baking Powder
3 Tbsp of Cocoa Powder

150g of Whitworths Caster Sugar
2 Small Eggs
40g of Butter
120m of Whole Milk
Vanilla Extract
70g of Chopped Aero

300g of Whitworths Icing Sugar
150g of Butter
2 Tsp of Peppermint Essence
Green Food Colouring
Aero Bubbles
Chocolate Cupcake
The Mint Buttercream
Directions
Preheat the oven at 170c
Place the cupcake cases in the tray
Mix the butter, sugar, flour, cocoa and baking powder with an electric whisk in a large mixing bowl
Whisk the milk, egg and vanilla extract in a seperate bowl until combined
Pour the wet mixture into the dry mixture until combined, then fold in the Aero chunks
Spoon the mixture into the cupcake cases and bake for 20 to 25 minutes. Then leave them to rest
For the buttercream, sift the Icing sugar into a large bowl then add the butter and whisk with an electric whisk until the mixture is soft and creamy, then add the peppermint and whisk again
Add the food colouring and whisk until you get the desired colour
Pipe your buttercream on your cupcakes, then decorate with 3 Aero bubbles on each cupcake. Enjoy
