Cheese Scones

Directions

1. Preheat the oven to 200°C/180°C fan and line a baking tray with greaseproof baking paper or a silicone mat.
2. Grate the cheese and set aside.
3. In a large bowl, mix together the flour and baking powder.
4. Chop up the butter into small cubes and rub it into the flour using your fingertips until you have a fine breadcrumb consistency. There should be no lumps of butter remaining.
5. Stir in the sugar and cayenne pepper.
6. Mix in 100g of the grated cheese.
7. Make a well in the centre and add the wholegrain mustard and milk. Mix together until a dough is formed.
8. Dust your work surface with flour and shape the dough into a circle, around 3cm thick.
9. Using a sharp knife, slice the dough into 6 even pieces (like a pizza).
10. Place the sliced dough onto the prepared baking tray, leaving a gap between each.
11. Brush the tops of the dough with a little milk.
12. Sprinkle the remaining grated cheese over the tops of the scones.
13. Bake in the oven for approx. 15 minutes until golden.
14. Remove from the oven and cool the scones on a wire rack.
15. Best enjoyed fresh on the day.
