Ingredients
- 125g Mature Cheddar Cheese
- 250g Self Raising Flour
- 1 Tsp Baking Powder
- 65g Unsalted Butter, cold

1 Tsp Whitworths Caster Sugar
- Pinch of Cayenne Pepper
- 1.5 Tsp Wholegrain Mustard
- 100ml Whole Milk, plus extra for brushing the tops
Directions
- Preheat the oven to 200°C/180°C fan and line a baking tray with greaseproof baking paper or a silicone mat.
- Grate the cheese and set aside.
- In a large bowl, mix together the flour and baking powder.
- Chop up the butter into small cubes and rub it into the flour using your fingertips until you have a fine breadcrumb consistency. There should be no lumps of butter remaining.
- Stir in the sugar and cayenne pepper.
- Mix in 100g of the grated cheese.
- Make a well in the centre and add the wholegrain mustard and milk. Mix together until a dough is formed.
- Dust your work surface with flour and shape the dough into a circle, around 3cm thick.
- Using a sharp knife, slice the dough into 6 even pieces (like a pizza).
- Place the sliced dough onto the prepared baking tray, leaving a gap between each.
- Brush the tops of the dough with a little milk.
- Sprinkle the remaining grated cheese over the tops of the scones.
- Bake in the oven for approx. 15 minutes until golden.
- Remove from the oven and cool the scones on a wire rack.
- Best enjoyed fresh on the day.
