Preheat the oven to 200°C and prepare a muffin tin with 6 cases.
Whisk flour, sugar, baking powder, and salt together in a large mixing bowl.
Mix together the oil, egg and milk. Pour into flour mixture and mix just until batter is combined. carefully fold in the blackberries.
Spoon batter (or use an ice-cream scoop) into the prepared muffin tin, filling right to the top.
Bake for, 20 to 25 minutes or until a skewer comes out clean.
Allow the muffins to cool. Gently slice off the muffin tops to create space for two spoonfuls of blackberry jam in the center. Replace the tops and repeat this process for each of the six muffin
