Heat your oven to 180C/fan 160C/gas 4
Line your load tin
In a mixing bowl, using a wooden spoon, combine the sugar and room temperature butter until smooth
Add the egg, vanilla and banana to the mixture and beat again for 1 minute
Sift the self-raising flour into the mixture, then add the cinnamon
Beat the mixture to combine fully. If the mixture is too thick, add a splash of milk
Pour the mixture into the loaf tin, then bake in your hot over for 45 minutes to 1 hour
Remove the banana bread from the oven. Set aside for a few minutes them dust some Whitworths Icing sugar
