Add the eggs, sugar, bicarbonate of soda, salt to the well dried cheese and mix until well combined with a fork. Then, incoprate the flour gradually.
Flour the working surface and knead the dough into a ball. Give it a round shape and divide it in 8 parts keeping one part to form the balls which will go on top. The dough must be slightly sticky. Use extra flour to give the doughnut a whole in the middle to form a ring.
Heat a generous amount of oil in a pan. Make sure to use a medium heat. Fry no more than 3-4 doughnuts at a time so there is enough space between them. Fry them on both sides until they are golden brown.
Transfer the doughnuts on a paper towel to remove the excess oil.
Serve hot with lots of crème fraiche and jam. Enjoy!
