Begin by peeling your mangoes and
discarding the peel. Cut the fruit flesh from the mangoes and discard the core
Place the mangoes, the apricots
with juice and the jam sugar into a large saucepan or pot. Mix everything well
Cook the mixture on a medium heat
while mashing the mangoes and apricots until you get a thick (but still a
little runny) jam-like consistency for 15-20 minutes. Stir in the lime juice
and cook for an additional 5 minutes
Add the chia seeds and vigorously
stir until incorporated
Let the jam cool completely
before transferring to clean and sterilised jar. Enjoy!
