Refreshing Lemon & Blueberry Chia Pudding, a nutrient-packed, easy-to-make breakfast. This delicious recipe combines zesty lemon and sweet blueberries with chia seeds to keep you energised throughout the day.
Add the blueberries, 2 tbsp of
the sugar and 1 tbsp lemon juice to a saucepan. Gently heat and simmer for 10
mins, stirring occasionally. Set aside to cool.
In a bowl/measuring jug, mix the
chia seeds with the soya milk and vanilla. Stand for 10 mins to thicken.
Mix in the lemon zest and 4 tbsp
lemon juice.
Stir in the remaining sugar.
Divide the chia pudding into
glasses and top with the blueberry compote.
