Lemon Bars

Directions

Biscuit Base

1. Preheat the oven to 180°C/160°C fan and line a 11 by 9 inch glass pan with greaseproof baking paper.

2. Mix together the melted butter, sugar and vanilla extract.

3. Stir in the flour until a wet dough forms. Spread the mixture in the prepared pan, pressing it down until level.

4. Bake in the oven for 20-25 mins until the edges start to brown.

5. Remove from the oven and set aside.

Lemon Topping

1. Whisk together the flour and sugar.
2. Add the eggs and mix until combined.
3. Mix in the lemon juice and pour the mixture over the biscuit base.
4. Bake in the oven for 20-25 mins until firm to the touch.
5. Remove from the oven and cool until the lemon bars reach room temperature.
6. Chill in the fridge for 2 hours then remove from the pan.
7. Dust the top with icing sugar (optional), slice into 16 bars and enjoy.
