Preheat the oven to 190 C
Mix together the butter and sugar until well
combined. Add the egg and beat.
Add the flours, baking powder and salt, mix and
then pour in half the sprinkles.
Make balls of dough and place on a baking tray
with greaseproof paper.
Bake for 8 minutes, remove from the oven and
place on a cooling rack.
Once the cookies have cooled, turn the cookies
upside down. Place a scoop of icing onto half of the cookies an top with the
other half, sandwiching them together.
Place straight into the freezer.
