Ingredients
- 128g of Plain Flour
- 1/4 Tsp of Baking Powder
- 1/4 Tsp of Salt
- 68g of Softened Butter
- 68g of Whitworths Light Soft Brown Sugar
- 1 Egg
- 1 Tsp of Vanilla Essence
- 30g of Sprinkles
- Vanilla Essence
Directions
Preheat the oven to 190 C
Mix together the butter and sugar until well combined. Add the egg and beat.
Add the flours, baking powder and salt, mix and then pour in half the sprinkles.
Make balls of dough and place on a baking tray with greaseproof paper.
Bake for 8 minutes, remove from the oven and place on a cooling rack.
Once the cookies have cooled, turn the cookies upside down. Place a scoop of icing onto half of the cookies an top with the other half, sandwiching them together.
Place straight into the freezer.
