Preheat the oven
to 200C/180C fan
Beat the butter using
an electric whisk or a stand mixer with the whisk attachment, until soft and
creamy
Beat in the Caster sugar, then the egg and vanilla
Finally add the
flour to make a dough - if the dough feels a bit sticky, add a little more
flour and knead it in
Flour your work surface, separate the dough into
6 or so pieces and roll out each piece one at a time to a 5mm thickness
Cut out the letter shapes and place them on a
baking tray, evenly spaced apart. Re-roll any off-cuts and repeat
Place the biscuits/trays in the fridge for 15-20
minutes (this is to stop the biscuits from spreading out of shape)
Bake the biscuits in the preheated oven for 8-10
minutes or until the edges are golden brown
Leave to cool completely before icing the
biscuits
Sieve the royal icing sugar into a bowl, make a
well in the centre and add 40ml of cold water
Using an electric hand whisk, mix for 3-4
minutes until the icing forms soft peaks, gradually increasing the speed
Divide the mixture into separate bowls and add
food colouring to each bowl, try not to over mix. Then pour into separate
piping bags - make sure you keep some white icing for the outline
Let the icing
harden, then enjoy!
