Preheat the oven to 180°C fan and lightly grease four ovenproof ramekins with butter.
Cream together the butter and sugars using a stand or hand mixer.
Add the egg and vanilla extract and mix until combined.
Sift the flour, baking powder and salt into the bowl and mix until a soft dough has formed.
Fold in the dark chocolate chips.
Spoon the cookie dough into the greased ramekins and bake them in the oven for 12-15 mins. The top should begin to turn golden brown and be slightly firm to the touch.
Remove from the oven and let the cookie dough stand for 10 mins before serving. The cookie dough will continue to cook, so don’t leave them standing much longer than 10 mins otherwise you won’t get a gooey centre.
Best served with a scoop of vanilla ice cream on top.
