Decadent French Chocolate Mousse

Directions

1. Separate the yolk from the white

2. Add a pinch of salt to the white eggs, then whisk the white until you get hard peaks

3. In the meantime, melt the chocolate in bain-marie

4. Once melted. remove the heat then incorporate the yolks and the sugar 

5. In a large bowl, add a 1/3 of the beaten eggs, then fold in the melted chocolate mixture

6. Slowly add the rest of the beaten eggs

7. Then cover and leave in the fridge overnight
