Dark chocolate, Whitworths Golden Caster sugar, eggs, pinch of salt
Directions
Separate the yolk from the white
Add a pinch of salt to the white eggs, then whisk the white until you get hard peaks
In the meantime, melt the chocolate in bain-marie
Once melted. remove the heat then incorporate the yolks and the sugar
In a large bowl, add a 1/3 of the beaten eggs, then fold in the melted chocolate mixture
Slowly add the rest of the beaten eggs
Then cover and leave in the fridge overnight
