Ingredients
- 2 eggs

175g Whitworths caster sugar
- 2 cooking apples (250g peeled and diced weight)

1 heaped tbsp Whitworths light soft brown sugar
- 2 tbsp cold water
- 150g olive oil
- 250g self-raising flour
- 1 ½ tsp bicarbonate soda
- 1 tsp ground cinnamon
- Big pinch of salt
- 1 sharp eating apple, cored and thinly sliced

2 tbsp Whitworths demerara sugar
Directions
- Preheat the oven 180C/160 fan.
- Line a 32x23cm sized baking tin that is at least 3cm deep.
- Put the cooking apples, light soft brown sugar and water in a small pan and cook over a moderate heat with a lid on until the apples are soft and combusted, 5 – 8 mins. Remove from the heat, roughly mash to form apple sauce then leave to cool.
- Beat the caster sugar and eggs together until pale and voluminous. Add the olive oil and cold apple sauce and mix briefly. Add the flour, bicarbonate soda, cinnamon and salt, mixing briefly to combine.
- Pour the cake batter into the lined tin and arrange the thinly sliced apple over the top of the cake then sprinkle over with the demerara sugar.
- Bake for around 35 minutes, until a skewer comes clean. Cool on a wire rack before cutting into slices.
