The best Apple and Olive Oil Traybake recipe. Sweet, simple apple cake spiced with cinnamon and balanced with the rich, moistness of olive oil. A popular Italian treat!
Tray bakes are perfect for the back to work/school season, they slice up into lovely lunchable treats! This apple and olive one is packed with flavour and defiantly not one to miss.
Line a 32x23cm sized baking tin that is at least 3cm deep.
Put the cooking apples, light soft brown sugar and water in
a small pan and cook over a moderate heat with a lid on until the apples are
soft and combusted, 5 – 8 mins. Remove from the heat, roughly mash to form
apple sauce then leave to cool.
Beat the caster sugar and eggs together until pale and
voluminous. Add the olive oil and cold apple sauce and mix briefly. Add the
flour, bicarbonate soda, cinnamon and salt, mixing briefly to combine.
Pour the cake batter into the lined tin and arrange the
thinly sliced apple over the top of the cake then sprinkle over with the
demerara sugar.
Bake for around 35 minutes, until a skewer comes clean. Cool
on a wire rack before cutting into slices.
