Sweet Red Onion Marmalade
Red onions, thinly sliced - 1kg
Cloves garlic, crushed - 2
Dried Thyme - ½ tsp
Butter - 80g
Olive Oil - 4 tbsp
Pinch dried chilli flakes
Whitworths Molasses Sugar - 120g
Red Wine Vinegar - 150ml
Red Wine - 100ml
Put the onions, garlic, butter, olive oil, thyme and chilli flakes and Whitworths Molasses Sugar in a large pan and cook on a medium heat for 20 minutes.
Add the vinegar and wine and continue to cook for a further 30-40 minutes to reduce. Allow to cool, transfer into storage jars and refrigerate.
Serve with warmed goats cheese, or cheese on toast – delicious!
Delicious served with sausages and mash!
